We started with a simple idea: to bring Italy to the world through a glass of gin. VII Hills Gin doesn't belong to one city or one coastline. It celebrates the whole of Italy: its regions, its people, its craft and its love of sharing a drink before dinner. Every element is Italian, from the seven botanicals to the bottle.

Our mission is to champion the Negroni and the Italian aperitivo, sharing the ritual with bartenders and guests wherever they are. We want to change what people expect gin to taste like and how they enjoy it.

From Italian botanicals to your glass
VII Hills Gin is distilled at Torino Distillati in Moncalieri, one of Italy's historic distilleries.
Seven botanicals in slow infusion
Juniper, pomegranate, blood orange, rose hip, Roman chamomile, artichoke and celery. Each is hand selected by a master herbalist. The botanicals rest in a water and alcohol solution for 10 to 15 days, then they're pressed to draw out as much flavour as possible.
Vacuum pot distillation
Taking the air out lowers the boiling point, so we distil at around 65°C instead of the much higher temperatures of a traditional still. The gentler heat protects the delicate aromas that high temperatures would lose, which gives VII Hills Gin its smooth texture.

Every botanical in VII Hills Gin comes from Italy. We chose them to recreate the bittersweet balance of the aperitivo: three bring a gentle bitterness, three bring sweetness and soft floral notes, and Italian juniper holds them together.
Each botanical is hand selected, then all seven rest together for 15 days before distillation.

The backbone
Juniper: Italian juniper gives the gin its classic structure. It needs less time than the others to release its flavour, so it joins the infusion only for the last two days.
The bittersweet heart
Roman chamomile: soft, floral bitterness, and a familiar ingredient in Italian vermouths and amari. Artichoke: an earthy, gentle bitter note that comes from its natural cynarin. Celery: fresh and green, it adds a savoury lift to the finish of every sip.
The sweet side
Pomegranate: the sweet fruit note you'll notice first on the palate. Blood orange: bright Italian citrus that opens up the nose. Rose hip: not rose petal, but the fruit of the plant. It's spicier and more tart, a little like hibiscus.
VII Hills Gin started with a question from Italian bartenders: why was the Negroni, Italy's most famous aperitivo, always made with a London Dry Gin? We made our gin to answer it.
Our seven botanicals follow the Negroni's bittersweet balance. Roman chamomile, artichoke and celery bring a gentle bitter, herbal edge. Pomegranate, blood orange and rose hip add sweetness and soft floral notes. Italian juniper holds it all together.
We use vacuum pot distillation at around 65°C, which keeps the aromas bright and the texture smooth. The juniper is there but doesn't take over. That balance is what makes VII Hills Gin just as good in a Martini, a G&T, an Espresso Martini or a spritz as it is in a Negroni.

Every element of VII Hills Italian Dry Gin comes from Italy: the seven botanicals, the glass and the bottle. That keeps our supply chain short and fully traceable.
We distil at Torino Distillati in Moncalieri using vacuum pot distillation. Running at around 65°C, the process keeps the botanicals' delicate aromas intact and needs less energy than traditional distillation.
Our bespoke bottle is made by Italian glassmakers, and our cap is produced from recyclable materials. Since 2020 our bottles have been made with at least 30% recycled glass.
